Smoked and Braised Lamb Shanks and Smoked Apple Juice

Instructions for cold smoking the lamb follow quickly: ‘Use barrel bungs, ideally, light them, let them burn briefly, then blow out the fire to create about 90 minutes of billowing, cold smoke.’

Old Fashioned: Fireside Chat
Posted by Michael EmanMy first test of a new simple syrup is always an Old Fashioned. For this version, I prefer smoked cinnamon bitters and ginger bitters to bring out the orange and clove flavors in the simple syrup and bourbon, but orange and Angostura would also work.
